Mimosa Salad (4 Servings)
- 2 apples, diced
- 1 slice pineapple, in pieces
- 4 ounces (1 cup) coarsely grated celeriac
- 2 hard-boiled egg yolks
- Green salad
- 7 tablespoons mayonnaise (scant ½ cup)
- 7 tablespoons thick cream, whipped
- Mix ingredients and stir carefully into the mayonnaise blended with the whipped cream.
- Sieve the egg yolks over the salad and garnish with the green salad.
